Sweet potato casserole

Ingredients for 14 servings:

  • 6 large sweet potatoes
  • 2 eggs
  • 75 g sugar
  • 6 packs of vanilla sugar
  • 60 g butter, soft
  • 60 ml milk
  • some cinnamon
  • 1 pinch of salt
  • 100 g butter, melted
  • 300 g brown sugar
  • 400 g pecans
  • 200 g marshmallow(s)

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 30 minutes

Cook the sweet potatoes in salted water until al dente, then peel and mash with a potato masher. Combine the mixture with eggs, sugar, vanilla sugar, butter, milk, a little cinnamon, and a pinch of salt. Pour the mixture into a greased casserole dish. For the topping, caramelize the butter and sugar slightly—just lightly. Then stir in the pecans and spread the mixture over the casserole. Sprinkle the marshmallows over the casserole before baking. Bake the casserole in a preheated oven at 170 to 180 degrees Celsius (350 to 350 degrees Fahrenheit) for 30 to 35 minutes.
