Sweet potato chicken pot

Ingredients for 4 servings:

  • 4 chicken breasts
  • 4 sweet potatoes
  • 2 garlic cloves
  • 1 tsp cumin
  • 1 bunch of coriander leaves
  • 1 can of tomatoes
  • 3 tbsp oil
  • 200 g peas, frozen
  • 80 g peanut butter
  • 1 tbsp lemon juice
  • n. B. salt and pepper, black

Finely chop the garlic cloves and cilantro. Roughly chop the chicken breasts and mix them with the garlic, cilantro, and cumin in a bowl. Heat the oil in a pan and brown the meat. Peel the sweet potato, chop it into large pieces, and add it to the tomatoes. Season with salt and pepper and cook until the potatoes are almost tender. Then add the peas, cook until tender, and then add the peanut butter and lemon juice. This is one of my kids’ favorites, even with the cilantro.
