- 2 sweet potatoes

- Pepper, freshly ground

as a side dish to salads or as a snack
Wash the sweet potatoes, but don’t peel them. Then slice them very finely using a food processor. A mandoline or mandoline is a bit too coarse for this, but it will work in a pinch. Place the slices in a bowl and drizzle with olive oil. Add coarse salt and pepper, and mix everything together. Line a baking sheet with parchment paper and place the slices next to each other. Brown at 200°C (400°F), but be careful! The slices will brown slowly, but then quickly turn black, and that’s not good. So you have to keep an eye on them and wait for the right moment. It’s worth the attention, because the results are phenomenal.
