Ingredients
 

chopped chicken

  • 400 g Chicken breast
  • 0,5 tsp Sea salt
  • 0,5 tsp Fennel seeds
  • 0,5 tsp Cumin
  • 0,5 tsp Carrot Pepper
  • 1 pinch Cinammon
  • 2 Garlic cloves, finely grated
  • 3 tbsp Olive oil
  • 1 Red Onion

spicy majo

  • 1 Egg yolk
  • 1 tsp Mustard
  • 1 Lime, juice and zest
  • Salt
  • Espelette pepper
  • Sunflower oil

Sweet potato fries

  • 2 Sweet potatoes
  • Oil
  • Salt

King oyster mushrooms

  • 3 King oyster mushrooms
  • Garlic oil
  • Salt
  • Black pepper from the mill

Instructions

  • First, peel the red onion, halve and cut lengthways into strips and set aside. Cut the chicken breast into thin strips and place in a bowl. Add the grated garlic.
  • Finely grind the salt, pepper, fennel seeds, cumin and cinnamon in a mortar and then pour over the meat, massage in the olive oil really well with your hands and marinate for about 2 hours.
  • Then fry in a hot pan while turning - no oil needs to be added. It's pretty quick. Add the onion strips. Everything should not cook for more than 6-7 minutes.

spicy majo

  • Put the egg yolks, mustard and a little lime juice in a bowl and stir well. With a majo, always make sure that all ingredients are at the same temperature (room temperature), this is guaranteed to succeed. Now, very slowly while stirring diligently, add enough oil until the desired consistency is reached.
  • Now season with salt, lime juice, lime zest and Espelette pepper and cover in the refrigerator until serving.

Sweet potato fries

  • Peel the sweet potatoes and cut into fries. Then fry them in 180 degree hot oil in the deep fryer for about 8-9 minutes, drain well and then season with salt.

King oyster mushrooms

  • Cut the king oyster mushrooms lengthways into 3 thick slices. Heat some garlic oil in a pan - the garlic oil is a "waste product" of my garlic confectionery. see my KB: Confit garlic - and fry the mushroom slices on both sides until golden brown and then season with salt and pepper.

Assembly and finish

  • Pour the majo into small serving bowls and place in the middle of the plate. Serve with the French fries, king oyster mushrooms and the chicken.
