Sweet potato gratin

Ingredients for 4 servings:

  • 8 sweet potatoes
  • 250 g cream
  • 50 g mountain cheese
  • salt and pepper
  • 1 pinch of nutmeg
  • some mountain cheese, grated

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Boil the sweet potatoes in water until tender. Then rinse and peel them. The best way to do this is to cut off the top and bottom, then slice them lengthwise, so they’ll be easier to remove from the skin. Cut them lengthwise and place them tightly in a casserole dish. Briefly bring the cream, cheese, and seasoning to a boil and pour over the potatoes. Finally, sprinkle with some cheese for a gratin. Briefly bake in the oven at 200°C (400°F) until the cheese has melted. This goes very well as a side dish with my crispy-crusted rack of lamb.
