Ingredients for 1 servings:
- 3 cup(s) oatmeal
- 1 cup flour
- 1 tsp baking powder
- 2 tsp cinnamon
- ½ cup brown sugar
- 1 apple, grated
- ¾ cup apple juice
- ½ cup yogurt, plain or with apple
- ¾ cup raisins
- ½ cup cornflakes (whole grain), crumbled

with cinnamon and raisins
Place two cups of oats in a blender along with the sugar and cinnamon and blend until the oats are powdered. Then transfer the mixture to a bowl. Add the remaining oats and the flour mixed with the baking powder and mix evenly. Peel, core, and cut the apple into small pieces. Stir it into the dry ingredients along with the apple juice and yogurt. The batter should now be sticky. If there isn’t enough liquid, simply add a little more apple juice or yogurt until the batter reaches the desired consistency. Finally, fold the raisins and crushed cornflakes (best placed in a freezer bag and crushed with a rolling pin) evenly into the batter. Using two teaspoons, drop small heaps onto a baking sheet lined with parchment paper and bake in an oven preheated to 200°C for about 15 minutes, until the cookies are light brown. Then let them cool on a baking sheet.
