Sweet Potato Gratin

- 700 g Orange sweet potatoes
- 300 g Potatoes
- 3 Egg yolk
- 300 Milliliters Rama Cremefine 15%
- 3 Pc. Peeled garlic clove
- 2 tablespoon Extra virgin olive oil
- 200 g Freshly grated Parmesan
- Sea salt from the mill
- Pepper from the grinder
- Peel the sweet potatoes and potatoes, cut / slice them into 2 mm wide slices and place in cold water. Peel the garlic and cut into small cubes.
- Sweat the garlic and olive oil in a saucepan, until golden yellow. Put the potato slices dripping wet in the pot, mix with the garlic and let simmer for about 5 minutes. Freshly grate the Parmesan. Grease the baking dish a little. Preheat the oven to 150 ° C hot air.
- Mix the egg yolks with Cremefine, season with salt and pepper and add to the potato slices, mix carefully. Add 125 g Parmesan and mix carefully again so that the potato slices stay whole. Then fill the baking dish and sprinkle with the remaining 75 g of Parmesan.
- Place in the oven for 15 minutes at 150 ° C, then again for 15 minutes at 180 ° C. There was also pork fillet wrapped in bacon, which came into the oven for the last 10 minutes, and a fresh salad.
