Sweet potato mash with cheese and onions

Ingredients for 4 servings:

  • 750 g sweet potatoes, peeled
  • 1 onion(s), finely chopped
  • 1 clove(s) garlic, squeezed
  • 100 g Cheddar cheese
  • 200 ml cream, heated
  • 1 tbsp butter or olive oil
  • 50 g Parmesan or Cheddar, grated
  • salt and pepper

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Cheesy Onion Mashed Sweet Potatoes – great for Thanksgiving, vegetarian

Boil the sweet potatoes with salt in plenty of water until soft. Meanwhile, fry the onion in butter or olive oil over medium heat until soft and light brown. Add the garlic last. Drain the potatoes and let them cool slightly. Add the onion mixture and the cheddar cheese and mash with a potato masher. Add enough hot cream to form a not-too-stiff puree. Season with salt and pepper. Spoon or spread the mixture into a suitable baking dish. Sprinkle with the Parmesan (or cheddar) cheese (you can easily prepare the puree before this step and chill the casserole). Place the potatoes under a hot broiler (220°C) for a few minutes to create a crust. When reheating, lower the temperature (200°C) and allow for longer.
