Sweet Potato Omelette
The perfect sweet potato omelette recipe with a picture and simple step-by-step instructions.
- 1 Pc. Large sweet potato, thinly sliced
- 100 g Seitan tofu sausage, homemade cut into cubes
- 100 g Smoked tofu
- 2 Pc. Spring onions, in rings
- 3 tbsp Soy flour
- 9 tbsp Water
- 1 tsp Turmeric
- 0,5 tsp Jalapeno chilli powder, or similar
- Oil, salt, pepper
- Sour cucumber, herbs
- Sear the sweet potatoes in a little oil in a non-stick pan. Fry on a low heat for about 10 minutes, turning. Add the tofu sausage and spring onion. Fry for another 5 minutes. Salt and pepper.
- Mix the soy flour with the water without lumps. Mix in a little salt, turmeric and, for a little spiciness, chilli powder. Pour over the potatoes and stir a little. Let everything stop a little and fold one side on top of the other. Turn off the stove and let it steep for another 2 minutes. Let it slide carefully onto a plate. Garnish with pickles and herbs and finish immediately.
