Sweet Potato Pancakes with Soy Tomato Sauce
The perfect sweet potato pancakes with soy tomato sauce recipe with a picture and simple step-by-step instructions.
For the sauce
- 2 piece Garlic cloves crushed
- 1 piece Freshly pooped green chilli
- 2 piece Coriander sprigs chopped
- 1 tbsp Soy sauce dark
- Flour for turning
- Oil for frying
- 2 tsp Oil
- 1 piece Garlic clove chopped
- 2 cm piece Fresh ginger
- 3 piece Peeled and diced tomatoes
- 2 tbsp Soy sauce dark
- 1 tbsp Lime juice
- 2 tbsp Coriander finely chopped
- For the sauce, heat the oil in a wok. Add garlic and ginger and fry for about 1 minute. Add the tomatoes and stir for another 2 minutes. Take off the stove. Add the soy sauce, lime juice and coriander. Set aside and keep warm.
- Peel the sweet potato and grate it finely. Process the garlic, chilli and coriander in a mortar to a smooth paste. Add the soy sauce. Mix the paste with the sweet potatoes.
- Shape the potato mixture into 12 flat round buffers with your hands. Turn in a little flour.
- Heat some oil in a pan. Fry the pancakes until golden brown over high heat. Turn only once
- Drain on kitchen paper and serve with the hot soy tomato sauce.
