Sweet Potato Pancakes with Soy Tomato Sauce

The perfect sweet potato pancakes with soy tomato sauce recipe with a picture and simple step-by-step instructions.

For the sauce

  • 2 piece Garlic cloves crushed
  • 1 piece Freshly pooped green chilli
  • 2 piece Coriander sprigs chopped
  • 1 tbsp Soy sauce dark
  • Flour for turning
  • Oil for frying
  • 2 tsp Oil
  • 1 piece Garlic clove chopped
  • 2 cm piece Fresh ginger
  • 3 piece Peeled and diced tomatoes
  • 2 tbsp Soy sauce dark
  • 1 tbsp Lime juice
  • 2 tbsp Coriander finely chopped
  1. For the sauce, heat the oil in a wok. Add garlic and ginger and fry for about 1 minute. Add the tomatoes and stir for another 2 minutes. Take off the stove. Add the soy sauce, lime juice and coriander. Set aside and keep warm.
  2. Peel the sweet potato and grate it finely. Process the garlic, chilli and coriander in a mortar to a smooth paste. Add the soy sauce. Mix the paste with the sweet potatoes.
  3. Shape the potato mixture into 12 flat round buffers with your hands. Turn in a little flour.
  4. Heat some oil in a pan. Fry the pancakes until golden brown over high heat. Turn only once
  5. Drain on kitchen paper and serve with the hot soy tomato sauce.
