Ingredients for 6 servings:
- 1 sweet potato(s), approx. 250 g
- 2 m.-sized eggs
- 3 tbsp, heaped coriander, fresh
- 2 red chili, sliced
- 3 spring onions, chopped
- 2 cm ginger, grated
- 12 slices of bacon
- n. B. Pfeffer

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 1 hour; Total time approx. 2 hours 30 minutes

Preheat the oven to 170 degrees Celsius (350 degrees Fahrenheit). Peel and then grate the sweet potato. Finely chop the onions and coriander. Finely slice the chilies and finely grate the ginger. Crack the eggs and mix all the ingredients together, except the bacon. Let everything sit in the refrigerator for one hour. Drain the liquid. Form the batter into six equal-sized patties. Wrap each patty with two slices of bacon. Bake in a casserole dish for about one hour. Tip: This also works on the grill using indirect heat.
