Sweet schnitzel

Ingredients for 3 servings:

  • 1 cup semolina
  • ½ liter of milk
  • 200 g cream
  • 1 packet of vanilla sugar
  • 1 tbsp butter
  • 1 egg(s), more if needed
  • Breadcrumbs mixed with sugar
  • Butter mixed with rapeseed oil
  • compote

Instructions

Working time approx. 30 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 30 minutes

Heat the milk, add the cream, and bring to a gentle boil while stirring. Add the vanilla sugar. Slowly add the semolina while stirring. Remove from the heat as soon as it starts to bubble. Add a little more milk if necessary until you get a smooth, not too thick paste. Stir in the butter evenly. Pour the hot mixture onto a platter or large plate (first “quenched” with cold water to prevent sticking). Let it cool, then refrigerate overnight. Cut the mixture into pieces of any size. Dip in beaten egg, then in the sugar-breadcrumb mixture, and fry in the butter-rapeseed oil mixture. Serve immediately with fruit. It tastes best hot!
