Sweet spring rolls à la Vero

Ingredients for 4 servings:

  • 2 bananas
  • 1 mango(s)
  • 1 kiwi(s)
  • 1 tsp, heaped vanilla sugar
  • 100 g berries, as desired, fresh or frozen
  • n. B. Dough sheets for spring rolls, frozen
  • Oil (frying oil)

Thaw the spring roll wrappers; do not place them in the oven or in the sun, as this will make them too hard to roll. While the wrappers are thawing, cut the fruit into small cubes, heat them in a saucepan with the vanilla sugar and about a quarter of the berries until the cubes soften slightly. Take one of the thawed wrappers, cut it in half, and pile some of the fruit filling onto one end (not too much, otherwise you won’t be able to make more rolls). Fold in the sides and then the bottom and roll. Repeat until all the filling is used up. Heat the oil in a wok and fry the rolls until they are lightly browned. Alternatively, you can also deep-fry them briefly. Keep the rolls warm in the oven at 50 degrees Celsius. To serve, puree the remaining berries with a little sugar (to taste) to make a sauce and serve over the rolls. Note: The fruit can be varied according to taste. The rolls also go well with vanilla ice cream or sauce.
