Swiss-style pork fillet

Ingredients for 4 servings:

  • 2 pork fillets, approx. 400 g each
  • 200 g cheese (Gouda)
  • 2 tsp paprika powder, hot
  • 1 tsp thyme, dried
  • 1 tsp oregano, dried
  • Salt and pepper, black
  • 2 tbsp clarified butter
  • 125 ml meat broth
  • 200 g crème fraîche

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the Gouda into approximately 2 cm long sticks. Cut slits all around the two pork fillets and press the cheese sticks into them. Mix 1 teaspoon of black pepper with paprika, thyme, oregano, and a little salt and toss the pork fillets in it. Heat clarified butter in a roasting pan and brown the fillets all over. Deglaze with the meat broth, stir in the crème fraîche, and braise the fillets, covered, for about 25 minutes. Finally, season the sauce with salt and pepper. Serve with mashed potatoes or French fries.
