Tagliatelle with arugula in tomato sauce

Ingredients for 2 servings:

  • 200g tagliatelle
  • 200 g cherry tomatoes
  • 250 ml tomato(s), pureed
  • 80 g arugula
  • 1 small onion(s)
  • olive oil
  • Salt
  • pepper
  • Parmesan, grated

Instructions

Chop the onions into small pieces, quarter the cherry tomatoes, and wash the arugula. Cook the pasta in salted water to taste. Meanwhile, heat a little olive oil in a pan and sauté the onions. When the onions are translucent, add the passata and simmer, seasoning with salt and pepper to taste. After a few minutes, add the cherry tomatoes and leave on the stove until the pasta is tender, adjusting the seasoning if desired. Finally, add the sauce to the pasta in the pot and toss with the arugula. Sprinkle with Parmesan cheese before serving, if desired.
