Tandoori Jackfruit

Ingredients for 2 servings:

  • 1 can of jackfruit, approx. 225 g
  • 3 tbsp tandoori masala
  • 3 tsp chili powder
  • 150 ml yogurt substitute
  • 1 ½ tsp sugar
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 1 hour; Total time approx. 3 hours 15 minutes

Empty the canned jackfruit into a sieve, rinse thoroughly under running water, and let it drain. For the marinade, combine the tandoori masala, chili powder, yogurt, sugar, salt, and pepper to make a marinade. Place the drained jackfruit and the marinade in a large bowl or box and mix or shake well. Let it sit for at least 2 hours. Preheat the oven to 170°C (top/bottom heat). Place the marinated jackfruit on a baking tray lined with baking paper. Bake in the preheated oven on the middle rack for about 60 minutes, until the pieces are nicely browned. Serve the tandoori jackfruit. For example, simply as finger food, or as a side dish to curries or naan bread.
