Spicy Prawns on Warm Glass Noodle Salad

The perfect spicy prawns on warm glass noodle salad recipe with a picture and simple step-by-step instructions.

Marinade for shrimp and salad:

  • 2 tbsp Chili oil
  • 1 tbsp Soy sauce dark
  • 1,5 tbsp Honey
  • 3 tbsp Coconut vinegar
  • 1 tsp 5-Gewürze-Pulver
  • 1 tsp Ginger powder
  • 1 tsp Chilli flakes
  • 3 small Garlic cloves finely chopped
  • Salt
  • 10 middle Shrimp

Salad:

  • 50 g Red peppers
  • 50 g Yellow peppers
  • 50 g Zucchini
  • 80 g Pak Choi (mini)
  • 70 g Asian mushrooms, mixed or just one variety
  • 4 Garlic cloves
  • Marinade v.d. shrimp
  • 2 tbsp Peanut or wok oil
  • 2 Eggs

Marinade for shrimp and salad:

  1. Skin the garlic, finely chop. Put together with all the above ingredients in a bowl and stir vigorously.
  2. Remove the shell from the prawns – except for the tail. Slightly score the upper bulge and remove the visible bowel. Then rinse it a little under cold water, pat dry and cut into the body approx. 2 cm lengthways from the former side of the head to the tail (butterfly cut). Then put the prawns in the marinade, mix well with it and let it steep for at least 1 – 2 hours.

Salad:

  1. In the meantime, cook the glass noodles according to the instructions on the packet, rinse with cold water, spread out slightly on the board. Keep ready. Wash, dry and core the peppers and cut into bite-sized, not too small pieces. Do the same with the zucchini. Wash the mini pak choi (it is more tender than the big one), shake it out a little and cut the stalk into strips and the leaves just a little small. Only cut the mushrooms into small pieces (do not wash them) if they are too big. Skin the garlic, roughly chop.

Completion:

  1. Heat the oven to 50 ° (keep warm). Heat a wok or a larger pan to a high temperature. Lift the prawns out of the marinade with a fork, tap lightly on the edge of the bowl and fry all around without adding any oil. When they have changed color from gray to orange, place on a plate and place in the oven to keep warm and steep. They should still be slightly glassy on the inside, but not raw.
  2. Now heat the oil in the wok, add all of the vegetables at once and sauté them until they are firm to the bite, pushing them back and forth. Turn down the temperature and pour the remaining marinade on the vegetables and stir. Then add the glass noodles, fold in thoroughly and heat.
  3. Then move the whole mixture a little to one side in the wok, whisk the eggs vigorously, pour onto the free area, let stand until crumbly while stirring gently. Then lift it under the entire mass.
  4. Arrange the lukewarm salad in the middle of a plate, place the shrimp all around and …………… then just let it taste …………. .
