Tanja's chicken ragout

Ingredients for 8 servings:

  • 1 kg chicken breast fillet(s)
  • 250 g mushrooms
  • 80 g butter
  • 1 lemon(s)
  • 100 ml white wine
  • 500 ml broth
  • 4 tbsp, leveled flour
  • 150 ml cream
  • 4 egg yolks
  • some salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Cut the chicken fillets into small pieces, heat the butter in a pan, and brown the meat. Meanwhile, trim and finely chop the mushrooms. Add the mushrooms to the meat, mix, and cook briefly. Add the flour and stir well. Fry briefly and deglaze with the stock. Bring to a boil. Whisk the egg yolk with the white wine and cream. Squeeze the juice of one lemon. Add everything to the meat and stir well; do not boil. Season with salt and pepper. Serve with rice.
