Tarragon strawberries

Ingredients for 4 servings:

  • 2 limes
  • 100 g brown sugar
  • 6 sprigs tarragon
  • 100 ml water
  • 750 g strawberries

Instructions

Working time approx. 5 minutes; Rest period approx. 1 day; Cooking/baking time approx. 10 minutes; Total time approx. 1 day 15 minutes

Bring the finely grated zest and 5 tablespoons of lime juice to a boil with the sugar, tarragon, and 100 ml water. Cover and simmer gently for 10 minutes, then let cool. Meanwhile, hull the strawberries and halve or quarter them. Pour the cooled syrup through a sieve over the strawberries. Marinate overnight and then use. Ideal with ice cream or mousses.
