Tart with green asparagus and Brie

Ingredients for 2 servings:

  • 125 g puff pastry
  • 1 bunch of green asparagus
  • 80 g Brie(s)
  • 1 egg(s)
  • 1 tsp, heaped mustard
  • 3 tbsp milk
  • ½ tsp salt
  • some pepper, freshly ground

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Wash the asparagus, peel the bottom ends, trim off the tough ends, and cut the asparagus stalks into pieces. Place in boiling salted water, cook for about 5 minutes until al dente, drain well, and let cool. Thaw the puff pastry slightly, then preheat the oven to 200/220°C (fan/top/bottom heat). Roll out the puff pastry and line the dish with it, forming a rim about three fingers high. Pierce the base of the pastry several times and carefully score the edges with a knife, but do not cut all the way through. Bake in the preheated oven for about 5 minutes. Meanwhile, whisk the egg, mustard, milk, and spices with a fork and slice the Brie. Score the edges of the pre-baked base again. First, spread the asparagus tightly over the base, cover with the Brie, and pour the egg wash over it. Bake for 10 to 15 minutes, until the egg whites have set and the cheese is lightly browned.
