Tartar and cucumber stew

Ingredients for 2 servings:

  • 1 onion(s), peeled
  • 500 ml vegetable stock
  • 200 g tartar
  • 200 g potatoes, peeled
  • 1 cucumber(s)
  • 1 bunch of dill
  • 6 tbsp sour cream
  • salt and pepper
  • Paprika powder

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

WW-suitable

Bring the vegetable broth to a boil in a saucepan, add the finely diced potatoes. Finely dice the onion. Crumble the tartar and stir it into the pan with the diced onions. Peel the cucumber, dice it, and add it to the pan. Simmer on low heat for about 5-10 minutes, until the cucumber and potatoes are soft. Remove the pan from the heat, stir in the chopped dill and sour cream, and season to taste.
