Ingredients for 4 servings:

  • 2 onions
  • 1 garlic clove(s)
  • 400 g zucchini
  • 30 g butter
  • 1 tomato(s)
  • 4 eggs
  • 50 g cheese (grated)
  • 1 pinch(s) of salt and pepper
  • Parsley

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Slice the onions into rings, peel and crush the garlic. Sauté them in butter along with the diced zucchini, then add the diced tomato. Season with salt and pepper and simmer with the lid on for about 6 minutes. Beat the eggs with a fork and a pinch of salt, then stir in the parsley. Pour over the braised vegetables and sprinkle with grated cheese. Cook in a covered pan over low heat for about 5 minutes.
