  • 1 egg yolk
  • ½ tsp salt
  • 3 tbsp olive oil
  • 300 g onion(s), blanched
  • 125g bacon
  • 100 g crème fraîche
  • 100 ml water

Knead the flour, two tablespoons of oil, egg yolk, salt, and about 100 ml of water into a smooth dough. Shape the dough into a ball and rub it with the remaining tablespoon of oil. Wrap the ball in foil and let it rest for at least 1/2 hour, if possible. Then halve the ball and roll out the two halves into a thin round of dough. Spread crème fraîche on both circles and top with the thinly sliced ​​and briefly fried (or blanched) onion rings and the bacon (preferably cut into strips or cubes beforehand). Bake in a preheated oven at about 240 degrees Celsius for about 8 minutes. A simple meal, a delight served with a glass of white wine!
