Ingredients for 2 servings:

  • 250 g flour
  • 100 g lard
  • 200 g onion(s)
  • 100 g bacon
  • 250 g sour cream
  • 2 eggs
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 40 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 40 minutes

Set aside about 2 teaspoons of lard in a pan. Combine the remaining lard with 1/8 l water in a saucepan and heat gently until the lard has melted. Remove from the heat. Mix the flour with the salt, gradually add the lard water, and knead until an elastic, smooth dough is formed. Chill for about 1 hour. Dice the onions and fry them with the bacon in the pan with the lard until translucent, then let cool. Divide the dough and roll out into two thin flatbreads. Place the flatbreads on two baking sheets lined with baking paper. Whisk together the eggs and sour cream and stir in the onion-bacon mixture, season with salt, pepper, and nutmeg. Brush the flatbreads with this mixture and bake at 180°C (convection oven) for 20 minutes.
