Ingredients for 1 servings:

  • 350 g wheat flour, type 550
  • 1 tsp salt
  • 2 tbsp oil
  • 190 ml water
  • ½ bag(s) of dry yeast
  • 1 cup crème fraîche
  • 5 tbsp milk
  • 1 pinch of salt
  • 1 pinch(s) of pepper
  • 1 pinch of nutmeg
  • 3 m.-sized onion(s)
  • 150 g bacon, streaky

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 10 minutes

Mix flour, salt, oil, yeast, and water into a dough. Knead until it no longer sticks; if necessary, add flour or water to the dough until it reaches the right consistency. Roll out the dough and place it on a baking sheet. Let it rise in the oven at 50°C for 30 minutes. In the meantime, peel the onions, quarter them, and thinly slice them. Whisk the crème fraîche with the milk until smooth and season lightly with salt, pepper, and nutmeg. Mix the onions well into the cream. Cut the streaky bacon into thin strips. Now spread the cream and onion mixture over the dough. Then scatter the bacon loosely on top. Baking times: 8 minutes at 300°C top/bottom heat, 2 minutes at 300°C fan-assisted (high speed). Turn off the oven and let it rest for 1 minute. The dough will be nice and crispy on the outside without becoming “board-hard.”
