Ingredients for 4 servings:
- 250 g flour
- 1 egg(s)
- ⅛ tsp salt
- 80 g butter or margarine
- ½ cup(s) water
- 750 g fresh leaf spinach
- Salt
- 3 eggs, hard-boiled
- 225 g lean cooked ham
- 2 onions, red
- ¼ liter sweet cream
- 2 eggs
- 2 egg yolks
- 1 tbsp flour
- 175 g cheese, grated Swiss
- 1 pinch of nutmeg
- Pepper, white
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Put the flour in a bowl and make a well in the center. Add the egg and salt, then sprinkle the butter, cut into pieces, over the flour. Chop these ingredients with a knife, add the water drop by drop, and knead into a firm dough. Line a greased quiche dish with the dough and prick the bottom several times with a fork. Wash and sort the spinach leaves thoroughly, then cook in salted water for 2 minutes, blanch, and drain well. Peel and roughly chop the eggs. Cut the ham into strips and the onions into strips. Mix these ingredients with the spinach and spread on the pie crust. Whisk the cream with the eggs and egg yolks, then add the flour and 150g of cheese. Season with white pepper and nutmeg. Pour over the filling and sprinkle with the remaining cheese. Bake in a preheated oven at 220°C for about 60 minutes and serve hot.
