Tarte flambée with apple

Ingredients for 4 servings:

  • 400 g flour
  • 20 g yeast
  • 2 tbsp sugar
  • 1 tsp salt
  • 2 tbsp vegetable oil
  • 2 apples, sour (Boskoop)
  • 2 small onions, red
  • 50 g hazelnuts
  • 100 g crème fraîche
  • 100 g goat’s cheese
  • salt and pepper
  • 5 sprigs of thyme
  • 10 sage leaves
  • Flour for the work surface
  • Grease for the tray

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 20 minutes

delicious vegetarian dish with goat’s cheese

Sift flour into a bowl and make a well in the bowl. Dissolve yeast in warm water, add to the well along with 1 tablespoon of sugar. Cover the bowl and let it rise in a warm place. After 10 minutes, knead the pre-dough with the dough hook of a hand mixer and slowly add 200 ml of warm water, salt, and oil. Continue kneading the dough, cover, and let it rise until it has roughly doubled in size. Slice the apples and mix with 1 tablespoon of sugar. Slice the onions. Roughly chop the hazelnuts. Knead the dough thoroughly on a floured work surface, then roll it out into a square and place it on a greased baking sheet. Spread the crème fraîche evenly over the dough, leaving a narrow border free. Place the apples and onion wedges on top, then spread the goat cheese on top. Season with salt and pepper. Sprinkle with nuts. Place the baking sheet in a preheated oven at 220°C (top/bottom heat) for about 20 minutes. Sprinkle the tarte flambée with fresh thyme and sage leaves and serve immediately.
