Tarte flambée with eggplant, honey and feta

Ingredients for 2 servings:

  • 1 pack of tarte flambée dough, ready-made
  • 200 g sour cream
  • 1 pack of feta cheese, spicy
  • 1 handful of arugula, optional
  • 1 small eggplant(s)
  • 1 garlic clove(s)
  • chili flakes
  • 1 onion(s)
  • 1 pack of pine nuts
  • 2 tbsp honey, liquid
  • Thyme
  • rosemary
  • salt and pepper
  • Honey mustard sauce

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Roll out the tarte flambée dough on a baking tray. Season the sour cream with plenty of thyme and rosemary, as well as salt and pepper. Mix in the garlic and spread the mixture over the dough. Slice or crumble the feta and spread evenly on top. Drizzle with about 2-3 tablespoons of runny honey. Season with chili flakes. Cut the eggplant into thin slices and place on top. Sprinkle with the pine nuts. Bake the tarte flambée in the oven at about 180 degrees Celsius until the base and the feta are golden brown (about 15 minutes). Spread some honey-mustard sauce over the tarte flambée. If you like, you can also use arugula as a topping.
