Tarte flambée with figs, feta and thyme honey

Ingredients for 1 servings:

  • 1 port. Tarte flambée dough (approx. 240 g)
  • 150 g crème fraîche
  • 3 figs, fresh
  • 5 slices of bacon
  • 2 small onions, red
  • 200 g feta cheese
  • salt and pepper
  • 3 tbsp liquid honey
  • 3 sprigs of thyme

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

First, prepare the honey and let it steep. Pluck the thyme leaves from the stems, chop coarsely to taste, and mix about 1 tablespoon of them with the honey. Preheat the oven to 240°C (top/bottom heat). Roll out the dough on baking paper on a baking sheet. Chop about 1 tablespoon of the remaining thyme leaves, mix them with the crème fraîche, and spread it on the dough about the thickness of a knife’s back, leaving a border about 1 cm wide all around. Halve the figs and cut into thin slices, the onions into thin wedges, and the bacon crosswise into strips about the thickness of a thumb. Dice or crumble the feta. Spread the ingredients one after the other on the dough and season to taste with freshly ground pepper. The feta releases quite a bit of salt, so add salt carefully. Bake the tarte flambée in the preheated oven for about 15-20 minutes until it is golden brown. About 5 minutes before the end of the baking time, drizzle the honey over the tarte flambée and continue baking. Baking time may vary depending on the oven.
