Ingredients for 4 servings:

  • 700 g potatoes
  • 2 cups of crème fraîche
  • 250 g bacon, diced
  • 50 ml dry white wine
  • 1 cheese (Reblochon), whole
  • 3 m.-sized onion(s)
  • salt and pepper

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 5 minutes; Total time approx. 1 hour 20 minutes

Peel the potatoes and cut into slices (approx. 0.5 cm). Then toss the potatoes with the crème fraîche, season with salt and pepper, and place in a baking dish. The potatoes should be completely coated with the mixture. Cook the potatoes in a preheated oven at 200°C (top/bottom heat) for approx. 45 minutes (depending on the type of potato), stirring occasionally. Meanwhile, finely chop the onions and sauté them in a pan with the bacon. Slice the Reblochon. When the potatoes are tender, pour over the white wine and fold in the onion and bacon mixture. Finally, cover the mixture with the cheese slices and bake for another 7 minutes, until the cheese is nicely melted. A fresh salad and a glass of wine go perfectly with this dish.
