Ingredients for 1 servings:

  • 250 g tartar (extra fine minced beef)
  • 1 egg yolk
  • 3 small gherkins (cornichons), finely chopped
  • 3 capers, chopped
  • 1 small onion(s), finely chopped
  • 1 tbsp chives, in rolls
  • Worcestershire sauce
  • Tabasco
  • salt and pepper
  • 1 anchovy fillet(s)

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Season the meat with salt and pepper and form into a ball. Place in the center of a large plate and make a well in the meat. Pour the raw egg yolk into the well, then arrange the gherkins, capers, onions, chives, and anchovy fillet in small piles around the meat. To eat, use a fork to mix the individual ingredients with the meat to taste and season the meat with Worcestershire sauce and Tabasco. The anchovy fillet is eaten with it. Serve with baguette or French fries with ketchup and mayonnaise. It is important to remember that this dish should be eaten immediately.
