The special type of turnip owes its name to the Brandenburg town of Teltow. It has a short, cone-like shape and slightly yellowish flesh.
Origin
The turnips originally came from Poland and Finland. But they were also cultivated in the Mark Brandenburg as early as the 13th century. In the 18th and 19th centuries, they were a popular delicacy that Goethe, among others, really appreciated.
Season
The turnips come freshly harvested onto the market in May/June and also in October/November.
Taste
Teltower Rübchen have a sweet, slightly spicy aroma reminiscent of kohlrabi and radish.
Use
The aroma of the Teltower Rübchen comes into its own when you caramelize the vegetables in a pan with a little butter and sugar. It goes well with fish or white meat. They are also suitable for gratins or grated raw as a salad.
Storage/shelf life
The turnips last a particularly long time if you lay them in moist sand and store them in a cool place. Since this is possible for very few people, they should be placed in the vegetable compartment of the refrigerator. There they stay fresh for 1 to 2 weeks.
