Ingredients
Sauce:
- Telly cherry pepper
- Grains of paradise
- 300 g Sliced mushrooms
- 4 Shallots chopped
- Clarified butter
- 200 ml Cream
- 1 tbsp Green pepper
- 200 ml Vegetable broth
- 1 tsp Garlic pepper
- 1 pinch Seasoned salt
- 1 shot Cognac
- Chives
- Salt
Instructions
- Pepper the beef rump steak with Telly cherry pepper and grains of paradise. Air conditioning for 30 minutes! Preheat the oven to 100 degrees and heat the clarified butter in a pan. Sear the steaks for 1 minute on each side! Douse with a little cognag and flambé! Let it cook in the oven for about 15-20 minutes!
- Then heat a little clarified butter in the same pan and fry the shallot wedges in it until crispy and add the mushroom slices. Season with garip pepper and deglaze with cream. Briefly boil down. Add green pepper! Add the vegetable stock, seasoned salt and mumble a little more. Add fresh chives.
- Add the meat juice from the steaks to the sauce. Possibly season again. Salt the steaks and serve with side dishes! I had mashed potatoes and endive salad with it! 🙂
