Tequila con Carne

Ingredients for 4 servings:

  • 600 g minced beef
  • 250 ml tequila
  • 2 tbsp olive oil
  • 1 m.-sized onion(s)
  • 1 tbsp mustard
  • 1 tbsp tomato paste
  • 3 stalk(s) Celery
  • 2 tbsp chili pepper(s) (chipotle), finely chopped
  • 1 red chili pepper(s)
  • 2 cloves garlic
  • 2 tsp, heaped seasoning mix (chili con carne)
  • 1 can of corn, approx. 340 g
  • 1 can tomatoes, chopped, approx. 400 g
  • 1 can kidney beans, approx. 400 g

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 4 hours; Total time approx. 4 hours 20 minutes

Finely chop the onions, celery stalks, chilies, chipotle, and garlic. Heat the oil in a saucepan and fry the mince slowly over low heat until crumbly. Add the onions, chilies, garlic, and celery and sauté. Then add the tomato paste, mustard, and chipotle and toast. Deglaze with tequila. Add all other ingredients. Simmer over low heat for about 3 hours. Add water if necessary.
