Tex-Mex Bean-Burger and Sweet Potato Fries
The perfect tex-mex bean-burger and sweet potato fries recipe with a picture and simple step-by-step instructions.
Bun / roll
- 90 ml Lukewarm water
- 90 ml (Pflanzen-)Milch
- 2 tsp Sugar
- 1 Sachets Dry yeast
- 2 tbsp Oil
- 175 g Spelled flour 630
- 125 g Cornmeal
- 0,5 tsp Salt
- 0,5 tsp Sesame and onion seeds
Jalapeno burger sauce
- 1 medium sized Onion
- 1 medium-sized red Pointed peppers
- 0,5 -1 Schote Jalapeno
- 2 -3 tbsp Oil
- 2 medium-sized toes Garlic
- 2 tsp Sugar
- 1 tsp Tex-Mex spice mix (in my KB)
- 0,5 tsp Each salt, pepper, paprika powder
- 1 Can (~ 400g) Chopped tomatoes
- 2 tbsp Lemon juice
Aioli
- 50 ml Vegetable cream
- 1 tsp Mustard
- 1 tsp Sugar
- 0,5 tsp Salt
- 1 tbsp Lemon juice
- 2 medium-sized toes Garlic
- 150 ml Rapeseed oil
Patty / meatball
- 1 Can Kidney beans
- 1 small can Corn
- 1 medium sized Onion
- 1 medium-sized red Pointed peppers
- 3 tsp Tex-Mex spice mix (in my KB)
- 100 g Chickpea flour
- 100 g Oil
Sweet Potato Fries
- 2 size Sweet potatoes
- 2 size Strength
- 1 tsp Garlic granules
- 2 tbsp Oil
- Salt

Bun / roll
- Mix the water, milk, sugar and yeast together. ….. Measure the spelled flour, corn flour, salt and oil. Process all ingredients into a smooth dough and leave to rise covered for about 4 hours.
- Put the dough together and divide into 4 servings. Shape the buns with damp hands and place them on a baking tray lined with baking sheets.
- Sprinkle with sesame seeds and possibly onion seeds, let rise for 10 minutes and then preheat the oven. Top / bottom heating 180 °.
- Bake the buns until golden brown for about 18-20 minutes, remove them and let them cool down.
Jalapeno burger sauce
- Clean the onion, bell pepper and jalapeno and cut into fine cubes. Braise in oil.
- Peel the garlic, remove the seedling and finely chop. … When the onions are translucent, add the garlic and steam until it no longer smells raw.
- Add the sugar and let it melt, add the spices and mix in well. Let the aroma develop briefly.
- Mix in the chopped tomatoes and lemon juice and bring to the boil. Simmer on medium heat for about 15 minutes. Stir every now and then.
- Now you can decide whether you prefer to have the sauce chunky or finely pureed. I opted for finely pureed. …. Let the sauce simmer with the lid at an angle for about 20-25 minutes. Stir every now and then. …. Pour into a bowl and let it cool down. The sauce thickens as it cools.
Aioli
- It is important with the aioli that the ingredients are as cold as possible.
- Put the vegetable cream, mustard, sugar, salt and lemon juice in a tall mixing bowl.
- Peel the garlic, remove the seedling and press twice through the press. Add to the cream. Now stir this with the electric whisk and whisk well.
- Pour in some oil in a thin stream and beat well into the mixture. Move the whisk up and down to beat in as much air as possible. Repeat this until the oil is used up and a creamy aioli has formed. Pour into a bowl and put it in the refrigerator.
Patty / meatball
- Drain the kidney beans and then mash them with a potato masher or fork. That doesn’t have to be fine.
- Clean the onion and paprika and chop finely. Mix all ingredients well and refrigerate until you need the mixture.
- When the other preparations are ready, divide the mixture into 4 portions, shape patties / meatballs with damp hands and slowly fry them in oil.
Sweet Potato Fries
- Peel the sweet potatoes and cut into 1 cm thick sticks. Pour into a large bowl and soak for 1 hour.
- Drain, rinse and dry the fries. Transfer to a large bowl and mix well with 1 tablespoon of starch until the fries look like powdered. Add 1 teaspoon of garlic powder and 2 tablespoons of oil and mix well.
- Place a baking tray on a baking tray, brush with a little oil and spread the fries on top. They shouldn’t touch or lie on top of each other.
- Put the tray in the preheated oven and bake the sweet potato fries at 200 ° for about 25-30 minutes. If everything doesn’t fit on one tray and you have to use two, swap the trays after 15 minutes and bake ready. … take out the fries and season with salt.
Further preparations
- Wash the lettuce and spin dry.
- Cut the tomato into 5mm thin slices. We need 4 slices.
- Peel the red onion, cut into thin slices with a slicer and cut into rings.
The assembly
- Have all the ingredients ready.
- Cut the 25th bun / bread roll and coat the lower half with the jalapeno burger sauce.
- Place the salad on top and then the patty / meatball.
- Then comes the tomato slice, the red onion rings and some aioli.
- Put the lid on and serve with the sweet potato fries, jalapeno burger sauce and aioli.
- We also had a pineapple and avocado salad.
