Thai Basil Pesto: Easy Recipe

How to make Thai basil pesto

Ingredients needed: 150ml peanut oil, 100g cashews, 100g fresh Thai basil, 2 chili peppers, 3 cloves garlic, 1 stick lemongrass, 20g fresh coriander, 2 tablespoons fish sauce (or soy sauce as an alternative), 2 tablespoons lime juice, 0.5 teaspoon sugar and a pinch of salt. How it works:

  1. Roast the cashew nuts briefly in a pan. Alternatively, you can buy cashews already roasted in some supermarkets. Finely dice the soft part of the lemongrass. Also, chop the chilies and garlic cloves.
  2. Place cashews, chilies, lemongrass, garlic, peanut oil, fish sauce, lime juice, and sugar in a blender and chop finely.
  3. Pluck off the basil and coriander leaves. Roughly cut them in half and then add the leaves to the blender. Blend everything well until you have the consistency you want. If you prefer the pesto to be finer, let the blender run a little longer.
  4. Finally, season the pesto with salt. Now you can put it directly on the dish and enjoy.
  5. If you don’t want to use the pesto right away, put it in glasses. So it’s also a pretty gift idea.
