aka Thai Iced Tea, directly from Thailand – the recipe for the delicious Thai Ice Tea
Pour boiling water over the tea leaves and all the spices (in a tea infuser or tea bag) and let it steep for 5 minutes. Then remove the tea leaves from the water. While the tea is still hot, stir in the sugar until it is completely dissolved. Then stir in the condensed milk. Let the tea mixture cool to room temperature or cooler for about 20 minutes. Fill large glasses (number depending on the serving) with ice and pour in the cooled tea mixture until each glass is about 3/4 full. To finish, slowly fill the glasses with more condensed milk, whole milk, or coconut milk (depending on your taste) – but do not stir (the last milk product should primarily serve as its own layer at the top of the glass). Notes: It is important to make the tea very strong (concentrate), as it will ultimately be diluted with milk and ice. You can also make a large batch of sweetened tea in advance and store it in the refrigerator. Then, when needed, simply pour it over the ice and top with the milk topping. For a caffeine-free version, you can also make it with rooibos tea.
