Thai Tofu Curry

Ingredients for 4 servings:

  • 400g tofu
  • 2 tbsp soy sauce
  • 1 small onion(s)
  • Chili, to taste
  • 1 tsp ginger powder (or fresh)
  • 1 tsp coriander, ground
  • 1 tsp caraway seeds
  • ½ bunch parsley
  • 1 tbsp soy sauce
  • 1 lemon(s)
  • 1 tsp sugar
  • 100 ml coconut milk
  • 2 cloves garlic
  • 2 tbsp oil

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Dice the tofu and mix it with the soy sauce in a bowl. Let it marinate for 15 minutes. For the paste, puree all the remaining ingredients, except the oil, in a food processor. Heat the oil in a pan or wok and fry the tofu cubes until well browned on all sides. Drain on kitchen paper. Wipe the wok clean. Add the paste to the wok and fry briefly. Return the tofu to the wok and mix well with the sauce. Serve with rice.
