Ingredients for 4 servings:
- 500 g minced beef, preferably Wagyu beef, alternatively regular
- 2 large onions, red
- 1 small jar of dry red wine
- 4 slice(s) smoked Gouda, alternatively Irish Cheddar
- 1 large beefsteak tomato(s)
- 4 rolls (rye-mixed toast rolls), 1 pack
- 1 cup sour cream
- 1 tbsp Dijon mustard
- 1 tsp honey, clear
- 1 handful of pickled gherkins (sandwich gherkins)
- 2 tsp apple cider vinegar
- 1 handful of dill
- 1 pack of breakfast bacon
- butter
- BBQ sauce
- 2 tsp lime juice
- Sea salt, from the mill
- Pepper, colored, from the mill
- brown sugar

Working time approx. 35 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 50 minutes
A god among burgers
Divide the ground meat into four pieces and form into patties of equal thickness. The patties should be about 1/3 larger than the buns, as they will shrink when cooked. Cover and set aside. Preheat oven to about 80 degrees Celsius (170 degrees Fahrenheit). For the relish, finely chop the cucumbers and dill and mix well with the sour cream, mustard, honey, lime juice, vinegar, and a pinch each of salt, pepper, and sugar. Tip: You may also want to add a very small amount of cucumber juice. Chill. Cut the red onions and tomato into not-too-thick slices. Add a teaspoon of butter to a small, non-stick pan and fry the onions until translucent. Sprinkle with a pinch of brown sugar, let it caramelize briefly, and then deglaze with red wine. Simmer over low heat until the onions have turned a rich color and the red wine has evaporated. Keep warm. Heat half a tablespoon of butter in a large, non-stick grill pan and fry the patties for a good two minutes on each side to brown them. Remove from the pan and season each patty with mixed pepper and a little salt. Place a slice of cheese on each patty, place on an ovenproof plate, or similar, and place in the oven until the cheese has melted. Fry two slices of bacon per burger in the hot cooking fat, remove, and drain well on kitchen paper. Toast the buns according to the package instructions. Remove the patties from the oven. Top the buns as follows (from bottom to top): one tablespoon of relish, meat with cheese, bacon, one tablespoon of BBQ sauce, caramelized red wine onions, and two thin slices of tomato. Add a tiny bit of relish at the end, if desired. Then fold them shut. Tip: Salad fans can add some fresh lamb’s lettuce to the burger. Serve with homemade sweet potato fries.
