Ingredients for 4 servings:
- 600 g gnocchi
- 400 g Cabanossi
- 1 bunch of soup vegetables
- 200 g processed cheese
- 400 ml vegetable stock
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes
With vegetables and Cabanossi
Cut the Cabanossi into thin slices and fry in a large, non-stick pan. Dice the vegetables and cook in the vegetable broth until al dente. Cook the gnocchi according to the package instructions. Then add the gnocchi and vegetables, along with the vegetable broth, to the pan with the fried Cabanossi. Stir in the cream cheese over medium heat and simmer for about 2 minutes. Season with salt, pepper, and paprika, if desired. I would recommend tasting this occasionally, though, as the vegetable broth is often already very spicy/salty.
