The perfect apple pancake

Ingredients for 4 servings:

  • 60 g flour
  • 60 ml water
  • 60 ml milk
  • 2 eggs
  • 20 g sugar
  • 1 pinch of salt
  • 50 g butter, melted
  • 2 apples, firm, sweet and sour
  • 1 packet of vanilla sugar

Instructions

Working time approx. 20 minutes; Rest time approx. 1 day 6 hours; Total time approx. 1 day 6 hours 20 minutes

Mix all ingredients (except butter, apples, and sugar) thoroughly until you have a smooth, medium-runny, creamy mixture. Melt the butter in a saucepan and stir half of it into the batter. Let the batter sit for 30 minutes to allow the flour to combine with the liquid. Slice the apples as thinly as possible. Melt a little butter in a pan, then add 1/4 of the batter and toss to coat. Let it set on the bottom over medium heat for about 2 minutes, then add the apple slices in a shingle-like pattern and brush with a little melted butter. When the batter begins to set in the middle, slide the pancake onto a lid, flip it over with a flick of the wrist, and cook for another 2 minutes. Place it back on the plate with the apples facing up. Sprinkle with bourbon vanilla sugar and prepare the other 3 pancakes in the same way.
