Ingredients for 6 servings:
- 200 ml water, lukewarm
- 5 tbsp milk, lukewarm
- 40 g sugar
- 1 cube of fresh yeast
- 85 g butter, melted
- 500 g wheat flour
- 1 egg(s)
- ½ tbsp salt
- 1 egg(s)
- 2 tbsp milk
- 2 tbsp water
- e.g. sesame, unhulled
Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 2 hours
Hamburger buns, burger buns
First, combine warm water, warm milk, and sugar in a bowl. Warm the mixture slightly and crumble in the yeast cube. Let it rest in a warm place for 5 minutes. Meanwhile, melt the butter. Combine the flour, salt, egg, and melted butter with the mixture of water, milk, sugar, and yeast. Knead everything into a smooth dough until it has a silky, shiny surface. Cover the dough and let it rise in a large bowl in a warm place for 60 minutes. Tip: I use a damp tea towel to cover it. This prevents the dough from drying out. After the dough has risen, fold it several times and then form brioche or buns of the desired size. Let these rise again in a warm place. Meanwhile, combine the egg with the milk and water. Brush the tops of the risen buns with this mixture and sprinkle the sesame seeds evenly on top of the buns in the desired amount. Now bake the buns in a preheated oven at 200°C (top/bottom heat) for 10-20 minutes on the middle rack. Once the buns have reached the desired browning, remove them from the oven.
