The simplest potato salad

Ingredients for 6 servings:

  • 1 kg potatoes
  • 1 jar mayonnaise
  • 1 jar gherkins (cornichons)
  • 1 ring/s sausage
  • 6 eggs
  • ½ bunch of spring onions
  • salt and pepper
  • Paprika powder, sweet
  • Sugar
  • possibly chives or parsley

First, boil the potatoes in their skins until they are soft but still firm to the bite. While the potatoes are cooking, cut the sausage and gherkins into small pieces, as you like them best. Slice the spring onions into small rings. Boil the eggs for 10 minutes. For the sauce, mix the mayonnaise with the pickle juice from the gherkins, depending on your preference. You can also add some of the spices from the pickle juice. This gives the whole thing a special flavor. Then I add some spices. Sugar is very important because of the acidity. Once the potatoes have been rinsed and peeled, cut them into small pieces. The sauce must be poured over the lukewarm potatoes. NOTE: Keep some sauce over, as the potatoes absorb a lot. Finally, I add the sausage, gherkins, and spring onions. You can also add parsley or chives if you like. The eggs are peeled, quartered, and added. I like to leave a few for decoration and place them on top.
