Thin oat-based pizza with mushrooms and hollandaise sauce

Ingredients for 5 servings:

  • 50 g oat flakes, fine
  • 150 g natural yogurt
  • 50 g applesauce
  • 50 ml water
  • 1 tsp salt
  • 2 tbsp olive oil
  • 7 g yeast, fresh
  • 200 g wheat flour, type 405
  • 250 ml hollandaise sauce
  • 15 mushrooms, total 325 g
  • 250 g feta cheese
  • garlic powder
  • n. B. herbs

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 20 minutes; Total time approx. 2 hours 40 minutes

Pour yogurt, water, and applesauce over the oats, season with salt, stir, and let stand for about 1 hour. Add the crumbled yeast, oil, and flour. Knead all ingredients together in a food processor until the dough pulls away from the bowl. Add another 1 tablespoon of flour if needed. Cover and let rise in a warm place until tripled in size. Knead thoroughly again and divide into 5 pieces. Roll each piece of dough into a circle approximately 21 cm in diameter and line a greased pizza pan with it. Spread each pizza base with the hollandaise sauce. Thinly slice 3 mushrooms and arrange on top. Brush again with the hollandaise sauce and season with garlic powder. Sprinkle each with 50 g of finely grated feta cheese. Bake in a preheated oven at 200 °C (180 °C fan oven) for about 20 minutes. Remove the finished pizza from the oven and sprinkle with herbs. Serve immediately.
