Ingredients for 1 servings:

  • 125 g honey
  • 100 g sugar
  • 50 g butter
  • 1 egg(s)
  • 250 g flour
  • 1 tbsp gingerbread spice
  • 1 tsp potash, mixed with water
  • some milk
  • Almond(s), peeled

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Cookies made from honey cake dough, makes about 30 pieces

For the dough, heat the honey, sugar, and fat while stirring until the mixture thickens. Transfer to a bowl and let cool. Whisk the egg and add 2 tablespoons to the honey mixture, setting the rest aside. Mix the flour and spices and sift into the honey mixture. Add the potash. Knead everything into a smooth dough. Adjust with flour or water. Cover the dough and let it rest in the refrigerator overnight, or preferably for 2-3 days. Roll out the dough to a thickness of 3-4 mm. Cut out clover leaf shapes and place them on the prepared baking sheet. Whisk the remaining egg with the milk and brush the leaves with the flour. Halve the almonds lengthwise and place the flat side down on the cookies. Bake at 200°C for about 12 minutes. Caution: rolling out the dough requires some strength!
