Three cheese spaghetti

Ingredients for 2 servings:

  • 200g spaghetti
  • ½ bunch parsley, chopped
  • 75 g mascarpone
  • 100g Gorgonzola
  • 2 tbsp water, possibly 3 tbsp
  • 30 g Parmesan, grated
  • some salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Cook the spaghetti in plenty of salted water. Melt the mascarpone in a non-stick pan over medium heat. Crumble the Gorgonzola and add it to the mascarpone. Drain the spaghetti, reserving some of the cooking water. Add the spaghetti to the pan, season with salt and pepper, and stir in 2-3 tablespoons of the cooking water. Sprinkle with the Parmesan and parsley and serve immediately.
