Thuringian stew

Ingredients for 4 servings:

  • 4 bratwursts (Thuringian)
  • 500 g potatoes
  • 2 onions
  • 150 g diced ham
  • 1 ½ liters vegetable broth
  • 400 g Brussels sprouts
  • 1 tsp, heaped thyme
  • 200 g cream
  • 6 tbsp mashed potato powder
  • salt and pepper
  • Oil for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

with bratwurst and Brussels sprouts

Clean the Brussels sprouts and remove the wilted outer leaves. Trim some of the stem. Slice the sausages, peel and dice the onions. Brown the sausage slices and diced onions along with the diced ham in a tall pot with the oil for about 5 minutes. Deglaze with the broth and bring to a boil. Add the Brussels sprouts and cook for 10 minutes. Meanwhile, peel and dice the potatoes. After the 10 minutes of cooking time, add the potatoes and simmer for another 5 minutes. Then stir in the cream and thyme. Thicken the soup with the mashed potato powder (first add 6 tablespoons and then add 1-2 tablespoons more until the soup reaches the desired consistency). Simmer over medium heat for another 15 minutes, stirring occasionally. Season to taste with salt and pepper.
