Thyme asparagus in an aluminum package

Ingredients for 2 servings:

  • 10 stalk(s) white asparagus, peeled
  • 2 limes, sliced
  • butter
  • Salt
  • Sugar
  • 8 sprigs of thyme
  • 1 dl vegetable broth
  • 1 lime(s), juice and zest
  • 2 tbsp honey
  • 2 cm ginger, peeled, grated
  • 50 g butter
  • some thyme, fresh, finely chopped
  • Salt
  • Black pepper, freshly ground

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Preheat oven to 200°C fan/convection oven. Spread the butter, salt, and sugar on two large pieces of aluminum foil. Place 2 lime slices on each, then 5 asparagus spears on top, then 2 more lime slices on top, and finish with 4 sprigs of thyme each. Seal the parcels tightly and place in the oven for about 20 minutes. Bring the broth with the lime juice and zest, honey, and ginger to a boil, then remove from the heat and stir in the cold butter, add the thyme, and season with salt and pepper. Unwrap the asparagus, serve, and drizzle with the sauce.
