Thyme – garlic oil and berry vinegar

Ingredients for 2 servings:

  • 6 cloves garlic
  • 1 bunch thyme, fresh
  • 4 tsp pepper berries, pink, pink
  • 1 liter olive oil
  • 75 g mixed berries (frozen)
  • 8 bay leaves
  • 1 liter balsamic vinegar bianco

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

For the oil, slice the garlic. Divide the thyme and pink peppercorns between two bottles and fill with the oil. Let it steep for 3-4 weeks. For the vinegar, divide the mixed berries and bay leaves between two bottles and fill with the balsamic vinegar. Let it steep for 3 weeks. Shake the oil and vinegar well occasionally to allow the aroma to disperse. Strain and transfer to clean bottles.
