Ingredients for 6 servings:
- 500 g mascarpone
- 125 g powdered sugar
- 5 egg yolks
- 2 egg whites
- 3 tbsp Amaretto, to taste
- 125 ml coffee (espresso)
- 200 g ladyfingers, especially for tiramisu
- 30 g cocoa powder

Beat egg whites until stiff peaks form. Beat egg yolks, powdered sugar, and Amaretto until stiff peaks form (approx. 3-4 minutes). Add mascarpone and mix. Finally, fold in the beaten egg whites. In a shallow, oblong bowl, combine espresso (approx. 6 cups of espresso) with a little Amaretto (approx. 3 tablespoons). Briefly dip the sponge fingers needed for one layer into the mixture. Layer the cream and sponge fingers in approximately 3 alternating layers in a bowl. Sprinkle with cocoa powder before serving.
